Garlic Parmesan Roasted Potatoes
Ingredients:
500g (1 lb) baby potatoes, halved
2 tbsp olive oil
3 cloves garlic, minced
½ tsp salt
½ tsp black pepper
½ tsp dried oregano (or Italian seasoning)
¼ tsp red pepper flakes (optional)
¼ cup grated Parmesan cheese
2 tbsp fresh parsley, chopped
Instructions:
Preheat oven to 200°C (400°F). Line a baking sheet with parchment paper.
In a large bowl, toss potatoes with olive oil, garlic, salt, pepper, oregano, and red pepper flakes.
Spread the potatoes cut side down on the baking sheet.
Roast for 25-30 minutes, flipping halfway through, until golden brown and crispy.
Remove from the oven and sprinkle with Parmesan cheese while hot.
Garnish with fresh parsley and serve warm.
