Custard-Filled Donuts

Ingredients:

For the dough:

  • 2 Β½ cups (320 g) all-purpose flour
  • 2 ΒΌ tsp (7 g) active dry yeast
  • ΒΌ cup (50 g) sugar
  • Β½ tsp salt
  • 2 large eggs
  • Β½ cup (120 ml) warm milk
  • ΒΌ cup (60 g) unsalted butter, softened
  • 1 tsp vanilla extract

For frying:

  • Vegetable oil (for deep frying)

For coating:

  • Β½ cup (100 g) sugar

For the custard filling:

  • 2 cups (500 ml) milk
  • 4 egg yolks
  • Β½ cup (100 g) sugar
  • ΒΌ cup (30 g) cornstarch
  • 1 tsp vanilla extract
  • 2 tbsp (30 g) butter

Instructions:

1. Make the dough:

  1. In a bowl, mix warm milk, yeast, and 1 tbsp of sugar. Let it rest for 10 minutes until foamy.
  2. Add eggs, remaining sugar, butter, vanilla, and salt. Mix well.
  3. Gradually add flour and knead for 8–10 minutes until the dough is smooth and elastic.
  4. Cover and let rise for 1–1.5 hours, until doubled in size.

2. Shape the donuts:

  1. Roll out the dough to about 1 inch (2.5 cm) thick.
  2. Cut into round shapes using a cutter or glass.
  3. Place them on parchment paper and let them rise again for 30–45 minutes.

3. Fry:

  1. Heat oil to 170–180Β°C (340–355Β°F).
  2. Fry the donuts in batches until golden brown on both sides.
  3. Drain on paper towels.

4. Coat:

  • While still warm, roll the donuts in sugar.

5. Make the custard:

  1. Heat milk until warm.
  2. In another bowl, whisk egg yolks, sugar, and cornstarch.
  3. Slowly pour warm milk into the egg mixture while whisking.
  4. Return mixture to the pot and cook over medium heat, stirring constantly until thickened.
  5. Remove from heat, add butter and vanilla, and mix well. Let cool completely.

6. Fill the donuts:

  • Fill a piping bag with custard and pipe it into each donut.
