Banana Cake with Cream Cheese Frosting


Banana Cake Recipe

Ingredients (Cake):

2-3 ripe bananas, mashed

1 ¾ cups (220g) all-purpose flour

1 teaspoon baking powder

1 teaspoon baking soda

½ teaspoon salt

½ cup (120g) unsalted butter, softened

1 cup (200g) granulated sugar

2 large eggs

1 teaspoon vanilla extract

½ cup (120ml) buttermilk (or milk mixed with 1 teaspoon vinegar/lemon juice)

Ingredients (Cream Cheese Frosting):

4 oz (115g) cream cheese, softened

¼ cup (60g) unsalted butter, softened

1 ½ cups (190g) powdered sugar

½ teaspoon vanilla extract


★Instructions

For the Cake:

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×9-inch baking pan.
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
  3. In another bowl, beat the butter and sugar until creamy and fluffy.
  4. Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract and mashed bananas.
  5. Gradually add the dry ingredients to the wet mixture, alternating with buttermilk, until well combined.
  6. Pour the batter into the prepared pan and smooth the top.
  7. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the cake cool completely before frosting.

For the Frosting:

  1. Beat the cream cheese and butter together until smooth and creamy.
  2. Gradually add powdered sugar and vanilla extract, mixing until fluffy.
  3. Spread the frosting evenly over the cooled cake.
