Banana Cake Recipe
Ingredients (Cake):
2-3 ripe bananas, mashed
1 ¾ cups (220g) all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
½ teaspoon salt
½ cup (120g) unsalted butter, softened
1 cup (200g) granulated sugar
2 large eggs
1 teaspoon vanilla extract
½ cup (120ml) buttermilk (or milk mixed with 1 teaspoon vinegar/lemon juice)
Ingredients (Cream Cheese Frosting):
4 oz (115g) cream cheese, softened
¼ cup (60g) unsalted butter, softened
1 ½ cups (190g) powdered sugar
½ teaspoon vanilla extract
★Instructions
For the Cake:
- Preheat your oven to 350°F (175°C). Grease and flour a 9×9-inch baking pan.
- In a bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
- In another bowl, beat the butter and sugar until creamy and fluffy.
- Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract and mashed bananas.
- Gradually add the dry ingredients to the wet mixture, alternating with buttermilk, until well combined.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool completely before frosting.
For the Frosting:
- Beat the cream cheese and butter together until smooth and creamy.
- Gradually add powdered sugar and vanilla extract, mixing until fluffy.
- Spread the frosting evenly over the cooled cake.
