Ingredients

For the crust:

  • 1 ½ cups graham cracker crumbs
  • 6 tbsp unsalted butter, melted
  • 2 tbsp granulated sugar

For the filling:

  • 3 (8 oz) packages of cream cheese, softened
  • ¾ cup granulated sugar
  • 3 large eggs
  • 2 ripe bananas, mashed
  • 1 tsp vanilla extract
  • ½ cup sour cream

For the topping:

  • 1 ½ cups fresh strawberries, hulled and sliced
  • ½ cup strawberry jam
  • 2 tbsp water

Instructions

Step 1: Prepare the crust

  1. Preheat the oven to 325°F (165°C).
  2. In a bowl, mix graham cracker crumbs, melted butter, and sugar until it resembles wet sand.
  3. Press the mixture firmly into the bottom of a 9-inch springform pan.
  4. Bake the crust for 8–10 minutes, then let it cool.

Step 2: Make the cheesecake filling

  1. Beat the cream cheese and sugar in a large bowl until smooth.
  2. Add eggs, one at a time, mixing after each addition.
  3. Stir in mashed bananas, vanilla extract, and sour cream until well combined.
  4. Pour the filling over the cooled crust.

Step 3: Bake the cheesecake

  1. Place the cheesecake in the oven and bake for 50–60 minutes, or until the center is set but still slightly jiggly.
  2. Turn off the oven, crack the door slightly, and let the cheesecake cool for 1 hour.
