Ingredients
For Pork Chops:
- 4 pork chops (bone-in or boneless)
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon dried thyme (or fresh sprigs)
- ½ teaspoon black pepper
- ½ teaspoon salt
For Baked Potatoes:
- 4 medium-sized potatoes (russet or Yukon Gold)
- 2 tablespoons olive oil or melted butter
- 1 teaspoon garlic powder
- 1 teaspoon dried rosemary or parsley
- Salt and pepper to taste
Instructions
1. Prepare the Potatoes:
- Preheat your oven to 400°F (200°C).
- Scrub the potatoes clean and pat them dry.
- Poke a few holes in each potato using a fork.
- Rub the potatoes with olive oil or butter, then season with garlic powder, rosemary, salt, and pepper.
- Place them on a baking sheet or wrap them in foil for softer skins. Bake for 50–60 minutes, flipping halfway through.
2. Cook the Pork Chops:
- While the potatoes bake, season the pork chops with paprika, thyme, salt, and pepper.
- Heat olive oil in a large skillet over medium heat.
- Sear the pork chops for 3–4 minutes on each side until golden brown.
- Add minced garlic and cook for another minute. Reduce the heat to low.
- Cover and let the chops cook for another 5–7 minutes, or until the internal temperature reaches 145°F (63°C).
3. Serve:
- Plate the pork chops alongside the baked potatoes.
- Garnish with fresh parsley or a dollop of sour cream on the potatoes for extra flavor.
