Crunchy Cabbage and Bell Pepper Salad

Ingredients:

  • ½ head of cabbage, finely chopped
  • 1 red bell pepper, diced
  • 1 medium carrot, grated
  • 2 green onions, sliced
  • ¼ cup fresh dill, chopped
  • ½ cup mayonnaise (or yogurt for a lighter option)
  • 1 teaspoon mustard (optional)
  • 1 teaspoon lemon juice
  • Salt and pepper to taste

Instructions:

  1. Prepare the vegetables: Finely chop the cabbage, dice the bell pepper, grate the carrot, and slice the green onions.
  2. Mix the dressing: In a small bowl, combine mayonnaise, mustard (if using), lemon juice, salt, and pepper.
  3. Combine ingredients: In a large bowl, mix all the vegetables together.
  4. Add dressing: Pour the dressing over the vegetables and toss well to combine.
  5. Garnish: Sprinkle fresh dill on top.
  6. Serve: Enjoy immediately or let it chill in the fridge for 15 minutes for better flavor.
