Ingredients:

- ¼ cup ground flaxseeds
- ¼ cup whole flaxseeds
- 1 packet (2 ¼ tsp) active dry yeast
- 1 cup warm water (110°F/45°C)
- 1 tbsp honey or sugar
- 1 tsp salt
- 2 tbsp olive oil
- 1 egg (optional, for richness)
- Sesame seeds for topping (optional)
Instructions:
- Activate the Yeast: In a bowl, mix warm water and honey. Sprinkle the yeast on top and let it sit for 5-10 minutes until foamy.
- Prepare the Dough: In a large bowl, mix the flour, ground flaxseeds, whole flaxseeds, and salt. Add the activated yeast mixture and olive oil, then mix until combined.
- Knead the Dough: Transfer to a floured surface and knead for about 8-10 minutes until smooth and elastic.
- First Rise: Place the dough in a greased bowl, cover it, and let it rise in a warm place for about 1 hour or until doubled in size.
- Shape and Second Rise: Punch down the dough and shape it into a loaf or rolls. Place it on a baking sheet, cover, and let it rise for another 30 minutes.
- Bake: Preheat the oven to 375°F (190°C). Brush the top with a little water or egg wash, sprinkle sesame seeds, and bake for 25-30 minutes until golden brown.
- Cool and Serve: Let it cool before slicing. Enjoy with butter or your favorite spread!
