Spicy Marinated Salmon Bowl with Avocado Cilantro Salsa

For the Bowl:

  • 2 cups cooked rice (white, brown, or cauliflower rice)
  • 1 cup shredded red cabbage
  • 1 cup chopped lettuce or spinach
  • 1/2 cup corn kernels (fresh, canned, or grilled)
  • 1/2 cup black beans (rinsed and drained)
  • 1/4 cup diced red onion
  • 1/4 cup cherry tomatoes, halved
  • 1 avocado, sliced or cubed
  • Fresh cilantro for garnish
  • Lime wedges for serving

For the Avocado Cilantro Sauce:

  • 1 ripe avocado
  • 1/4 cup fresh cilantro leaves
  • 1 clove garlic
  • 1/4 cup plain Greek yogurt (or a dairy-free alternative)
  • 1 tablespoon lime juice
  • 1-2 tablespoons water (to thin the sauce, as needed)
  • Salt and pepper to taste

Instructions:

  1. Prepare the Salmon:
    • In a small bowl, mix garlic powder, onion powder, salt, black pepper, paprika, and cayenne pepper.
    • Coat the salmon pieces with olive oil, then rub the spice mixture evenly over the salmon.
    • Heat a skillet over medium-high heat and cook the salmon for 3-4 minutes on each side until blackened and cooked through. Remove from heat and set aside.
  2. Make the Sauce:
    • In a blender or food processor, combine the avocado, cilantro, garlic, yogurt, lime juice, salt, and pepper. Blend until smooth, adding water to reach your desired consistency.
  3. Assemble the Bowl:
    • Start with a base of rice in each bowl. Add the shredded cabbage, lettuce or spinach, corn, black beans, red onion, cherry tomatoes, and avocado.
    • Top with blackened salmon.
  4. Serve:
    • Drizzle the avocado cilantro sauce over the bowl. Garnish with fresh cilantro and serve with lime wedges on the side.
