Chicken with black pepper and mushrooms

This Black Pepper Chicken and Mushroom recipe is a quick and delicious dish that combines rich flavors with simple ingredients. ★Ingredients

  • 500g boneless chicken breast or thighs (sliced into thin strips)
  • 200g mushrooms (button or shiitake, sliced)
  • 1 medium onion (sliced)
  • 1 bell pepper (sliced, optional for color)
  • 3 cloves garlic (minced)
  • 1 tablespoon freshly ground black pepper
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon cornstarch (mixed with 2 tablespoons water for a slurry)
  • 1 teaspoon sugar
  • 2 tablespoons oil (for frying)
  • ½ cup chicken stock or water
  • Spring onions (for garnish)

★Instructions

  1. Prepare the Chicken:
    • Marinate the chicken in 1 tablespoon soy sauce and a dash of black pepper for 10 minutes.
  2. Cook the Chicken:
    • Heat 1 tablespoon of oil in a pan or wok over medium heat. Sear the chicken until lightly golden and almost cooked through. Remove and set aside.
  3. Sauté the Vegetables:
    • In the same pan, add the remaining oil. Sauté garlic and onions until fragrant.
    • Add the mushrooms and bell peppers (if using) and cook for 2-3 minutes.
  4. Combine and Sauce:
    • Return the chicken to the pan. Add black pepper, remaining soy sauce, oyster sauce, sugar, and chicken stock. Stir well.
    • Simmer for 3-4 minutes until everything is coated in the sauce.
  5. Thicken the Sauce:
    • Pour in the cornstarch slurry while stirring continuously. Cook until the sauce thickens.
  6. Serve:
    • Garnish with chopped spring onions and serve hot with steamed rice or noodles.
