Spinach and Cheese Puff Pastry Squares
Ingredients
- 2 sheets puff pastry (thawed)
- 300 g fresh spinach (washed and chopped)
- 200 g feta cheese (crumbled)
or ricotta / cream cheese - 100 g mozzarella cheese (grated)
- 1 small onion (finely chopped)
- 2 cloves garlic (minced)
- 2 tbsp olive oil
- Salt and black pepper (to taste)
- 1 egg (beaten, for brushing)
- Sesame seeds (optional)
Instructions
- Prepare the filling
Heat olive oil in a pan over medium heat.
Add onion and garlic, sautรฉ until soft.
Add spinach and cook until wilted.
Remove from heat and let cool slightly.
Mix in feta and mozzarella cheese. Season with salt and pepper. - Assemble the pastry
Place one sheet of puff pastry on a baking tray lined with parchment paper.
Spread the spinach and cheese mixture evenly over it, leaving a small border.
Cover with the second puff pastry sheet.
Seal the edges with a fork. - Cut and brush
Cut the pastry into equal squares.
Brush the top with beaten egg.
Sprinkle sesame seeds if desired. - Bake
Bake in a preheated oven at 180ยฐC (350ยฐF) for 25โ30 minutes, or until golden brown and crispy. - Serve
Let cool slightly, then serve warm or at room temperature.
