Hearty Beef Stew Recipe
Ingredients:
- 1 kg (2 lb) beef chuck, cut into large chunks
- 4 potatoes, peeled and cut into chunks
- 3 carrots, sliced into thick pieces
- 1 large onion or pearl onions, peeled
- 3 cloves garlic, minced
- 3 cups beef broth
- 2 tbsp tomato paste
- 2 tbsp olive oil
- 1 tsp salt (or to taste)
- 1 tsp black pepper
- 1 tsp paprika
- 1 tsp dried thyme
- 1 bay leaf
- 2 tbsp flour (optional, for thickening)
- Fresh parsley, chopped (for garnish)
Instructions:
- Brown the Beef
Heat olive oil in a pan over medium-high heat. Add the beef chunks and brown them on all sides. This adds rich flavor. - Prepare the Vegetables
Place potatoes, carrots, and onions into a slow cooker (or large pot). - Add the Beef
Transfer the browned beef on top of the vegetables. - Make the Sauce
In a bowl, mix beef broth, tomato paste, garlic, salt, pepper, paprika, thyme, bay leaf, and flour (if using). Pour over the beef and vegetables. - Cook
- Slow Cooker: Cook on LOW for 7โ8 hours or HIGH for 4โ5 hours.
- Stovetop: Cover and simmer on low heat for about 2โ3 hours until beef is tender.
- Finish & Serve
Remove the bay leaf. Taste and adjust seasoning. Garnish with fresh parsley.
Serving Suggestion:
Serve hot with crusty bread or over rice for a comforting meal.
