Ingredients
- 6 boneless, skinless chicken breasts
- 2 large onions, thinly sliced
- 2 tablespoons olive oil
- 2 tablespoons butter
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1 teaspoon paprika
- ยฝ teaspoon black pepper
- ยฝ teaspoon salt (or to taste)
- 1 teaspoon dried thyme or Italian seasoning
- 1ยฝ cups shredded mozzarella or provolone cheese
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven to 375ยฐF (190ยฐC).
- Caramelize the onions:
Heat olive oil and butter in a pan over medium heat. Add sliced onions and cook for 15โ20 minutes, stirring often, until soft and golden brown. Add garlic and cook for 1 minute. - Make the sauce:
Pour in the chicken broth, add paprika, salt, pepper, and thyme. Simmer for 5 minutes until slightly thickened. - Assemble:
Place chicken breasts in a baking dish. Pour the onion sauce evenly over the chicken. - Bake:
Cover with foil and bake for 30 minutes. - Add cheese:
Remove foil, sprinkle cheese generously over the chicken, and return to the oven uncovered for 10โ15 minutes until the cheese is melted and golden. - Garnish & serve:
Sprinkle with fresh parsley and serve hot.
