Sausage, White Bean, Potato & Kale Soup

This hearty Sausage, White Bean, Potato, and Kale Soup is a comforting one-pot meal packed with flavor and nourishing ingredients. Perfect for cold days, it’s filling, easy to make, and great for family dinners.

Ingredients

  • 2 tablespoons olive oil
  • 1 pound smoked sausage, sliced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 medium potatoes, peeled and diced
  • 2 cans (15 oz each) white beans, drained and rinsed
  • 4 cups chicken broth
  • 2 cups fresh kale, chopped
  • 1 teaspoon dried oregano
  • ½ teaspoon dried thyme
  • Salt and black pepper, to taste
  • Red pepper flakes (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the sliced sausage and cook until browned. Remove and set aside.
  3. In the same pot, sauté onion until soft, then add garlic and cook for 30 seconds.
  4. Add diced potatoes, white beans, chicken broth, oregano, thyme, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 15–20 minutes, until potatoes are tender.
  6. Stir in kale and cooked sausage. Simmer for another 5 minutes.
  7. Adjust seasoning and serve hot.
