Sausage, White Bean, Potato & Kale Soup

Ingredients
- 2 tablespoons olive oil
- 1 pound smoked sausage, sliced
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 medium potatoes, peeled and diced
- 2 cans (15 oz each) white beans, drained and rinsed
- 4 cups chicken broth
- 2 cups fresh kale, chopped
- 1 teaspoon dried oregano
- ½ teaspoon dried thyme
- Salt and black pepper, to taste
- Red pepper flakes (optional)
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the sliced sausage and cook until browned. Remove and set aside.
- In the same pot, sauté onion until soft, then add garlic and cook for 30 seconds.
- Add diced potatoes, white beans, chicken broth, oregano, thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 15–20 minutes, until potatoes are tender.
- Stir in kale and cooked sausage. Simmer for another 5 minutes.
- Adjust seasoning and serve hot.
