๐Ÿฒ Hearty Beef & Vegetable Soup with Corn

๐Ÿ“ Ingredients:

  • 300g beef (cut into small chunks)
  • 1 corn on the cob (cut into pieces)
  • 2 carrots (sliced)
  • 2 potatoes (peeled and chopped)
  • 1 onion (chopped)
  • 2 cloves garlic (minced)
  • 1 liter beef broth (or water)
  • 2 tbsp olive oil
  • Salt and black pepper (to taste)
  • 1 tsp paprika (optional)
  • Fresh parsley (chopped)

๐Ÿ‘ฉโ€๐Ÿณ Instructions:

  1. Cook the beef
    Heat olive oil in a pot over medium heat. Add the beef and cook until browned on all sides.
  2. Add aromatics
    Add chopped onion and garlic. Cook for 2โ€“3 minutes until fragrant.
  3. Build the soup
    Pour in the beef broth. Bring to a boil, then reduce heat and let it simmer for 20 minutes.
  4. Add vegetables
    Add carrots, potatoes, and corn. Season with salt, pepper, and paprika.
  5. Simmer
    Cook for another 25โ€“30 minutes until the vegetables are tender and the beef is soft.
  6. Finish & serve
    Sprinkle with fresh parsley and serve hot.

๐Ÿ’ก Tips:

You can add celery or zucchini for extra flavor.For a richer taste, let it simmer longer on low heat.Serve with bread for a complete meal.
