Cheesy Baked Chicken with Caramelized Onion Sauce ๐Ÿ—๐Ÿง€

Ingredients

  • 6 boneless, skinless chicken breasts
  • 2 large onions, thinly sliced
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 teaspoon paprika
  • ยฝ teaspoon black pepper
  • ยฝ teaspoon salt (or to taste)
  • 1 teaspoon dried thyme or Italian seasoning
  • 1ยฝ cups shredded mozzarella or provolone cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 375ยฐF (190ยฐC).
  2. Caramelize the onions:
    Heat olive oil and butter in a pan over medium heat. Add sliced onions and cook for 15โ€“20 minutes, stirring often, until soft and golden brown. Add garlic and cook for 1 minute.
  3. Make the sauce:
    Pour in the chicken broth, add paprika, salt, pepper, and thyme. Simmer for 5 minutes until slightly thickened.
  4. Assemble:
    Place chicken breasts in a baking dish. Pour the onion sauce evenly over the chicken.
  5. Bake:
    Cover with foil and bake for 30 minutes.
  6. Add cheese:
    Remove foil, sprinkle cheese generously over the chicken, and return to the oven uncovered for 10โ€“15 minutes until the cheese is melted and golden.
  7. Garnish & serve:
    Sprinkle with fresh parsley and serve hot.
