- 170g warm milk
- 14g brewer’s yeast
- 55g sugar
- 335g all-purpose flour
- 1 pinch of salt
- 2 egg yolks
- 40g butter (softened)

- Pastry cream (custard filling)
👩🍳 Instructions
1. Activate the yeast
In a bowl, mix warm milk + yeast + 1 tbsp sugar. Let it sit 5–10 minutes until foamy.
2. Make the dough
Add flour, remaining sugar, salt, and egg yolks. Mix until combined.
3. Add butter
Knead in softened butter until the dough becomes smooth and elastic (about 10 minutes).
4. First rise
Cover and let it rise in a warm place for 1–2 hours until doubled in size.
5. Shape
Divide dough into small balls and place on parchment paper. Cover and rest 30–40 minutes.
6. Fry
Heat oil to medium (170–175°C). Fry each dough ball until golden brown on both sides.
7. Coat
Drain and roll immediately in sugar.
8. Fill
Use a piping bag to fill each donut with creamy custard.
