Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 250 g (½ lb) Italian sausage, crumbled
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • ½ teaspoon paprika
  • Salt and black pepper, to taste
  • 1 can (400 g / 14 oz) diced tomatoes
  • 3 cups vegetable or chicken broth
  • 1 cup heavy cream
  • 250 g (9 oz) cheese tortellini (fresh or refrigerated)
  • 2 tablespoons tomato paste
  • Optional: fresh basil or parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the chopped onion and sauté for 3–4 minutes until soft.
  3. Stir in garlic and cook for 30 seconds until fragrant.
  4. Add the Italian sausage and cook until browned, breaking it apart.
  5. Season with basil, oregano, paprika, salt, and pepper.
  6. Stir in tomato paste, diced tomatoes, and broth. Bring to a gentle boil.
  7. Reduce heat and simmer for 10 minutes.
  8. Add the tortellini and cook according to package instructions (about 5–7 minutes).
  9. Pour in the heavy cream and stir gently. Simmer for 2–3 more minutes.
