Hearty Beef Stew Recipe

Ingredients:

  • 1 kg (2 lb) beef chuck, cut into large chunks
  • 4 potatoes, peeled and cut into chunks
  • 3 carrots, sliced into thick pieces
  • 1 large onion or pearl onions, peeled
  • 3 cloves garlic, minced
  • 3 cups beef broth
  • 2 tbsp tomato paste
  • 2 tbsp olive oil
  • 1 tsp salt (or to taste)
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1 tsp dried thyme
  • 1 bay leaf
  • 2 tbsp flour (optional, for thickening)
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Brown the Beef
    Heat olive oil in a pan over medium-high heat. Add the beef chunks and brown them on all sides. This adds rich flavor.
  2. Prepare the Vegetables
    Place potatoes, carrots, and onions into a slow cooker (or large pot).
  3. Add the Beef
    Transfer the browned beef on top of the vegetables.
  4. Make the Sauce
    In a bowl, mix beef broth, tomato paste, garlic, salt, pepper, paprika, thyme, bay leaf, and flour (if using). Pour over the beef and vegetables.
  5. Cook
    • Slow Cooker: Cook on LOW for 7โ€“8 hours or HIGH for 4โ€“5 hours.
    • Stovetop: Cover and simmer on low heat for about 2โ€“3 hours until beef is tender.
  6. Finish & Serve
    Remove the bay leaf. Taste and adjust seasoning. Garnish with fresh parsley.

Serving Suggestion:

Serve hot with crusty bread or over rice for a comforting meal.
