Spinach & Feta Egg Muffins
Ingredients
- 6 large eggs
- 1 cup fresh spinach, chopped
- ½ cup feta cheese, crumbled
- ¼ cup milk (or cream for richer taste)
- 2 tablespoons olive oil or melted butter
- Salt and black pepper, to taste
- Optional: garlic powder, onion powder, or chili flakes
Instructions
- Preheat oven to 375°F (190°C).
- Grease a muffin tin with oil or cooking spray.
- In a bowl, whisk the eggs, milk, salt, and pepper until well combined.
- Stir in the chopped spinach and feta cheese.
- Pour the mixture evenly into the muffin cups (about ¾ full).
- Bake for 18–22 minutes, or until set and lightly golden on top.
- Let cool for a few minutes, then remove from the tin and serve.
Tips
- Add mushrooms, onions, or bell peppers for extra flavor.
- Store in the fridge up to 4 days or freeze for quick breakfasts.
- Serve warm or cold — perfect for meal prep!
