This Tomato Tofu Soup is a light, nourishing dish made with soft tofu, fresh tomatoes, mushrooms, and aromatic herbs. It’s comforting, healthy, and perfect as a starter or a light main meal.
Ingredients
- 400 g firm tofu, cut into squares
- 3 medium tomatoes, cut into wedges
- 1 handful fresh mushrooms (shiitake or button), sliced
- 2 green onions, cut into long pieces
- Fresh cilantro (coriander), a small bunch
- 1.2 liters vegetable broth or water
- 1 tablespoon vegetable oil
- 2 cloves garlic, lightly crushed
- Salt, to taste
- Black pepper, to taste
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the garlic and sauté for about 30 seconds until fragrant.
- Add the tomatoes and cook for 3–4 minutes until they start to soften.
- Pour in the vegetable broth (or water) and bring to a gentle boil.
- Add the mushrooms and let simmer for 5 minutes.
- Gently add the tofu pieces and cook for another 5 minutes.
- Season with salt and black pepper to taste.
- Add green onions and fresh cilantro just before turning off the heat.
