Custard-Filled Donuts
Ingredients:
For the dough:
- 2 Β½ cups (320 g) all-purpose flour
 - 2 ΒΌ tsp (7 g) active dry yeast
 - ΒΌ cup (50 g) sugar
 - Β½ tsp salt
 - 2 large eggs
 - Β½ cup (120 ml) warm milk
 - ΒΌ cup (60 g) unsalted butter, softened
 - 1 tsp vanilla extract
 
For frying:
- Vegetable oil (for deep frying)
 
For coating:
- Β½ cup (100 g) sugar
 
For the custard filling:
- 2 cups (500 ml) milk
 - 4 egg yolks
 - Β½ cup (100 g) sugar
 - ΒΌ cup (30 g) cornstarch
 - 1 tsp vanilla extract
 - 2 tbsp (30 g) butter
 
Instructions:
1. Make the dough:
- In a bowl, mix warm milk, yeast, and 1 tbsp of sugar. Let it rest for 10 minutes until foamy.
 - Add eggs, remaining sugar, butter, vanilla, and salt. Mix well.
 - Gradually add flour and knead for 8β10 minutes until the dough is smooth and elastic.
 - Cover and let rise for 1β1.5 hours, until doubled in size.
 
2. Shape the donuts:
- Roll out the dough to about 1 inch (2.5 cm) thick.
 - Cut into round shapes using a cutter or glass.
 - Place them on parchment paper and let them rise again for 30β45 minutes.
 
3. Fry:
- Heat oil to 170β180Β°C (340β355Β°F).
 - Fry the donuts in batches until golden brown on both sides.
 - Drain on paper towels.
 
4. Coat:
- While still warm, roll the donuts in sugar.
 
5. Make the custard:
- Heat milk until warm.
 - In another bowl, whisk egg yolks, sugar, and cornstarch.
 - Slowly pour warm milk into the egg mixture while whisking.
 - Return mixture to the pot and cook over medium heat, stirring constantly until thickened.
 - Remove from heat, add butter and vanilla, and mix well. Let cool completely.
 
6. Fill the donuts:
- Fill a piping bag with custard and pipe it into each donut.
