Country Fried Pork Chops with Bacon Gravy

Ingredients:

  • 4 bone-in pork chops
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 2 eggs
  • 1/4 cup milk
  • 4 slices bacon, chopped
  • 2 tablespoons butter
  • 1 1/2 cups chicken broth
  • 1/2 cup heavy cream
  • 1 tablespoon cornstarch (optional, for thickening)
  • 1/2 teaspoon dried thyme (optional)
  • Fresh parsley for garnish (optional)

Instructions:

  1. Prepare the Pork Chops:
    • In a shallow bowl, mix flour, salt, pepper, garlic powder, onion powder, and paprika.
    • In another bowl, whisk the eggs with milk.
    • Dredge each pork chop in the flour mixture, then dip in the egg mixture, and coat again with flour.
  2. Fry the Pork Chops:
    • Heat oil in a large skillet over medium-high heat.
    • Fry pork chops for about 4-5 minutes per side until golden brown and cooked through.
    • Remove and set aside.
  3. Make the Bacon Gravy:
    • In the same skillet, cook the chopped bacon until crispy. Remove bacon pieces and set aside.
    • Add butter to the pan, then whisk in 2 tablespoons of the leftover seasoned flour mixture. Cook for 1-2 minutes.
    • Gradually add chicken broth while stirring to avoid lumps.
    • Pour in the heavy cream and let the gravy thicken for a few minutes. If needed, mix cornstarch with a little water and add to the gravy.
    • Stir in the crispy bacon and thyme.
  4. Assemble and Serve:
    • Pour the bacon gravy over the fried pork chops.
    • Garnish with fresh parsley if desired.
    • Serve with mashed potatoes or rice.
