Slow Cooker Garlic Butter Beef Roast

Tender, juicy beef roast slow-cooked in a rich garlic-butter sauce with simple seasonings.

Ingredients

  • 2½–3 lb (1.1–1.4 kg) beef chuck roast
  • 4 tbsp unsalted butter
  • 1 cup beef broth
  • 6 cloves garlic, minced
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp onion powder
  • 1 tsp paprika
  • ½ tsp dried thyme
  • ½ tsp dried rosemary
  • 1 tbsp Worcestershire sauce
  • 1 tbsp olive oil
  • 1 small onion, sliced
  • 2–3 carrots, cut into chunks
  • 1 lb baby potatoes, optional
  • 1 tbsp cornstarch + 2 tbsp cold water, optional for thickening

Instructions

  1. Pat the beef roast dry with paper towels.
  2. Season all sides generously with salt, black pepper, onion powder, paprika, thyme, and rosemary.
  3. Heat the olive oil in a large skillet over medium-high heat. Sear the roast for 2–3 minutes per side until nicely browned.
  4. Place the sliced onion, carrots, and potatoes in the bottom of the slow cooker.
  5. Put the seared beef roast on top of the vegetables.
  6. Melt the butter and mix it with the minced garlic, beef broth, and Worcestershire sauce. Pour the mixture around and over the roast.
  7. Cover and cook on LOW for 7–8 hours or HIGH for 4–5 hours, until the beef is very tender.
  8. Transfer the roast to a serving plate and let it rest for 10–15 minutes.
  9. For thicker gravy, strain some of the cooking liquid into a saucepan. Mix cornstarch with cold water, whisk it into the liquid, and simmer until thickened.
  10. Slice or shred the beef and serve with the vegetables and garlic-butter gravy.

Serving suggestion: Serve with mashed potatoes, roasted vegetables, or crusty bread to soak up the flavorful gravy.
