Tender, juicy beef roast slow-cooked in a rich garlic-butter sauce with simple seasonings.
Ingredients
- 2½–3 lb (1.1–1.4 kg) beef chuck roast
- 4 tbsp unsalted butter
- 1 cup beef broth
- 6 cloves garlic, minced
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp onion powder
- 1 tsp paprika
- ½ tsp dried thyme
- ½ tsp dried rosemary
- 1 tbsp Worcestershire sauce
- 1 tbsp olive oil
- 1 small onion, sliced
- 2–3 carrots, cut into chunks
- 1 lb baby potatoes, optional
- 1 tbsp cornstarch + 2 tbsp cold water, optional for thickening
Instructions
- Pat the beef roast dry with paper towels.
- Season all sides generously with salt, black pepper, onion powder, paprika, thyme, and rosemary.
- Heat the olive oil in a large skillet over medium-high heat. Sear the roast for 2–3 minutes per side until nicely browned.
- Place the sliced onion, carrots, and potatoes in the bottom of the slow cooker.
- Put the seared beef roast on top of the vegetables.
- Melt the butter and mix it with the minced garlic, beef broth, and Worcestershire sauce. Pour the mixture around and over the roast.
- Cover and cook on LOW for 7–8 hours or HIGH for 4–5 hours, until the beef is very tender.
- Transfer the roast to a serving plate and let it rest for 10–15 minutes.
- For thicker gravy, strain some of the cooking liquid into a saucepan. Mix cornstarch with cold water, whisk it into the liquid, and simmer until thickened.
- Slice or shred the beef and serve with the vegetables and garlic-butter gravy.
Serving suggestion: Serve with mashed potatoes, roasted vegetables, or crusty bread to soak up the flavorful gravy.
