Ingredients:
- 500g beef (cut into chunks, with bones if possible)
- 300g beef tripe (cleaned and sliced)
- 2–3 medium potatoes (peeled and cubed)
- 1 small onion (chopped)
- 2 cloves garlic (minced)
- 1 tablespoon vegetable oil
- Salt and black pepper (to taste)
- 1 teaspoon paprika (optional)
- Fresh parsley or green onions (chopped)
- 1.5–2 liters water
Instructions:
- Prepare the meat:
- Wash the beef and tripe well.
- In a pot, add them with water and bring to a boil.
- Remove foam (impurities) from the surface.
- Cook the base:
- Add chopped onion and garlic.
- Let it simmer on medium-low heat for about 45–60 minutes until meat is tender.
- Add vegetables:
- Add the cubed potatoes.
- Season with salt, pepper, and paprika.
- Continue cooking for another 20–25 minutes until potatoes are soft.
- Finish the soup:
- Drizzle a little oil for extra flavor (optional).
- Taste and adjust seasoning.
- Serve:
- Garnish with chopped parsley or green onions.
- Serve hot with bread.
Tips:
- You can add a squeeze of lemon for a fresh taste 🍋
- For richer flavor, cook longer on low heat
- Some people add rice or small pasta for extra texture
