Hearty Beef & Tripe Soup (Traditional Style)

Ingredients:

  • 500g beef (cut into chunks, with bones if possible)
  • 300g beef tripe (cleaned and sliced)
  • 2–3 medium potatoes (peeled and cubed)
  • 1 small onion (chopped)
  • 2 cloves garlic (minced)
  • 1 tablespoon vegetable oil
  • Salt and black pepper (to taste)
  • 1 teaspoon paprika (optional)
  • Fresh parsley or green onions (chopped)
  • 1.5–2 liters water

Instructions:

  1. Prepare the meat:
    • Wash the beef and tripe well.
    • In a pot, add them with water and bring to a boil.
    • Remove foam (impurities) from the surface.
  2. Cook the base:
    • Add chopped onion and garlic.
    • Let it simmer on medium-low heat for about 45–60 minutes until meat is tender.
  3. Add vegetables:
    • Add the cubed potatoes.
    • Season with salt, pepper, and paprika.
    • Continue cooking for another 20–25 minutes until potatoes are soft.
  4. Finish the soup:
    • Drizzle a little oil for extra flavor (optional).
    • Taste and adjust seasoning.
  5. Serve:
    • Garnish with chopped parsley or green onions.
    • Serve hot with bread.

Tips:

  • You can add a squeeze of lemon for a fresh taste 🍋
  • For richer flavor, cook longer on low heat
  • Some people add rice or small pasta for extra texture
