For the Chicken
- 6 boneless, skinless chicken thighs
- 1 tablespoon olive oil

- ¼ cup brown sugar
- ¼ cup ketchup
- 2 tablespoons soy sauce

- 2 pounds potatoes, peeled and cubed

- ½ cup warm milk

- 1 pound fresh green beans, trimmed
- 1 tablespoon butter or olive oil
- 1 clove garlic, minced

Instructions
1. Prepare the Chicken
Pat the chicken thighs dry with paper towels. Season both sides with salt, black pepper, garlic powder, paprika, and onion powder.
Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook for 4–5 minutes per side, until nicely browned.
2. Make the Glaze
In a small bowl, whisk together the brown sugar, ketchup, soy sauce, honey, apple cider vinegar, minced garlic, smoked paprika, and black pepper.
Pour the glaze over the browned chicken. Reduce the heat to medium-low and simmer for 8–12 minutes, turning the chicken occasionally, until the sauce becomes thick and glossy.
Make sure the chicken reaches 165°F (74°C) in the thickest part.
3. Make the Mashed Potatoes
Place the potatoes in a large pot and cover with salted water. Bring to a boil and cook for 15–20 minutes, or until fork-tender.
Drain well. Add butter and warm milk, then mash until smooth and creamy. Season with salt and black pepper.
For extra richness, add another small spoonful of butter when serving.
4. Cook the Green Beans
Bring a pot of salted water to a boil. Add the green beans and cook for 4–5 minutes, until tender but still slightly crisp.
Drain and transfer them to a skillet with butter and minced garlic. Sauté for 2–3 minutes and season with salt and pepper.
5. Serve
Spoon the creamy mashed potatoes onto each plate. Add the glazed chicken thighs and arrange the green beans alongside them.
Drizzle some of the extra sticky brown sugar glaze over the chicken and serve immediately.
