Creamy Parmesan Chicken and Corn Bake

Ingredients

  • 4 chicken thighs (boneless or bone-in)
  • 2 cups sweet corn
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 2 cloves garlic, minced
  • 1 tablespoon butter
  • 1 teaspoon paprika
  • Salt and black pepper to taste
  • 1 teaspoon Italian seasoning
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Season the chicken thighs with paprika, salt, pepper, and Italian seasoning.
  3. In a skillet, melt the butter and sear the chicken for 3–4 minutes on each side until golden brown.
  4. In a baking dish, combine the sweet corn, heavy cream, garlic, Parmesan cheese, and half of the mozzarella cheese.
  5. Place the chicken thighs on top of the creamy corn mixture.
  6. Sprinkle the remaining mozzarella cheese over the dish.
  7. Bake for 25–30 minutes until the chicken is fully cooked and the top is golden and bubbly.
  8. Garnish with fresh parsley and serve warm.

Serving Suggestion

Serve with rice, mashed potatoes, or fresh salad for a comforting family dinner.
