
Ingredients
- 4 chicken thighs (boneless or bone-in)
- 2 cups sweet corn
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- 2 cloves garlic, minced
- 1 tablespoon butter
- 1 teaspoon paprika
- Salt and black pepper to taste
- 1 teaspoon Italian seasoning
- Fresh parsley for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- Season the chicken thighs with paprika, salt, pepper, and Italian seasoning.
- In a skillet, melt the butter and sear the chicken for 3–4 minutes on each side until golden brown.
- In a baking dish, combine the sweet corn, heavy cream, garlic, Parmesan cheese, and half of the mozzarella cheese.
- Place the chicken thighs on top of the creamy corn mixture.
- Sprinkle the remaining mozzarella cheese over the dish.
- Bake for 25–30 minutes until the chicken is fully cooked and the top is golden and bubbly.
- Garnish with fresh parsley and serve warm.
