Hearty Grandpa’s Beef & Veggie Macaroni Bake

This cozy family-style dish is packed with seasoned beef, tender potatoes, carrots, corn, and macaroni all baked together in a rich savory sauce. Perfect for cookouts, potlucks, or Sunday dinners!

Ingredients

  • 1 lb ground beef
  • 2 cups elbow macaroni, cooked
  • 2 medium potatoes, peeled and diced
  • 2 carrots, sliced
  • 1 cup corn kernels
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 cups beef broth
  • 1 can (15 oz) brown gravy or beef stew gravy
  • 1 tbsp Worcestershire sauce
  • 1 tsp paprika
  • Salt and black pepper to taste
  • 1 tbsp olive oil
  • Aluminum foil for baking

Instructions

  1. Cook the beef
    Heat olive oil in a skillet over medium heat. Add onion and garlic, cooking until fragrant. Add ground beef and cook until browned. Drain excess grease.
  2. Prepare the vegetables
    Add diced potatoes and carrots to the skillet. Stir for 5 minutes until slightly softened.
  3. Make the sauce
    Pour in beef broth, gravy, Worcestershire sauce, paprika, salt, and pepper. Simmer for about 10 minutes.
  4. Combine everything
    Stir in cooked macaroni and corn. Mix well until fully coated in the rich sauce.
  5. Bake
    Transfer mixture to a foil-lined baking dish or tray. Cover loosely with foil and bake at 375°F (190°C) for 30–35 minutes until bubbling and the potatoes are tender.
  6. Serve hot
    Let it rest for 5 minutes before serving. Enjoy with crusty bread or a fresh salad!
